The UK is a country. Complaining 'oh dear it didn't get the flag of the small home-nation I live in' is just silly, like an italian complaining that it said they were from italy, rather than from tuscany.
A country is a politically organised territory under one government, whereas wales, scotland and northern ireland have devolved parliaments and are therefore subject to the rule of more than one government anyway. You really have to stretch the definition to define the small ancestral homelands of the UK as their own countries- I think people only still try to claim they're countries in order to claim a sense of identity: IE 'I'm not british: I'm english!'.
