Well, there is Coffyliker's Blueslime server (76.180.206.71), but the New World is being built by the staff currently, so it is down for members. I'm pretty sure there's also a JV server, though I don't know much about it.

big brother (a plugin for bukkit servers) solves that problem. all you have to do is report your grief to a mod or admin on the server. And they can (almost) instantly fix it, and find out who griefed you.
Find a better server or just play Single Player.
